In this experience, you'll learn everything you need to start making immune-boosting, bubbly sodas. Start a couple of fermentation jars in your home, add some magic ingredients to make it healthy and balance the flavors, and you'll be an artisan soda maker in no time!

I'll be teaching a traditional Mexican recipe for a wild-fermented pineapple soda called tepache. With only a few ingredients, you can have your own delicious, fizzy, probiotic soda within a week! I'll give some tips on how to incorporate any spices and herbs you might have growing in your garden, on your balcony, or hiding in your pantry.

What happens when soda making goes awry and ferments a little too long? Vinegar! Learn about how to use amazing, fruit-based vinegar, which has an abundance of medicinal and culinary value.

This experience packed a punch! I thought it would be just a super fun activity with friends — yet it turned out to be a magical journey where we learned about the history, culture, biology, and traditions surrounding tepache and fermentation. It definitely widened my world and I immediately started inviting other friends. Sam was a knowledgeable and patient teacher as well as rooted and passionate about what she was teaching us. And she took the time to answer the many many questions I had. I absolutely recommend this to anyone who wants a memorably effervescent experience!

Firstly, wow. The soda that we made is so simple and fun to make and it tastes so good. I can't wait to make it more often in the future. Sam was an excellent instructor and taught us a lot about the microbes and fermentation process and she tailored the lesson to both our past knowledge and our ingredients on hand. I participated with a group of friends who now live far apart, and it was a perfect way to reconnect, which I was originally worried about because we were zooming in virtually. I would love to do this again and recommend it to any family or friend group. Gonna go get another glass of my pineapple soda right now. :)

This class was a perfect setting to get together with a few friends across the country, catch up, learn a new (and very valuable) skill, and have fun together! Sam was an excellent host who smoothly balanced the casual friend time with instruction, storytelling, and contextualizing. Even though she hosts the class from Costa Rica, she was able to offer suggestions and advice on making use of the ingredients with regards to where we were, what ingredients we had accessible, and the climate where we were each living. I felt like she did a great job bringing everyone onto the same page, which made it easy for beginners with no fermentation experience to follow. Sam would also add in lots of good knowledge and insight about fermentation throughout the class, keeping it engaging for more seasoned brewers / fermenters. This would be an awesome option for gathering in lieu of in-person activities (given the pandemic) for team building, family bonding, catching up + having fun with socially-distanced friends.
